It's the easiest ice cream recipe you can ever make!

As my first ice cream recipe, you know I had to make the Filipino favorite, ube. How could I not?! It’s one of my favorite flavors, and you know I had to bring my culture into this recipe. What I love about this recipe is that it’s so easy to make. While I do own an ice cream machine, I know most people do not. So, with you guys in mind, I decided to create a no-churn recipe and it only has 3 main ingredients. And the only machine you need is an electric hand mixer! I mean, if you don’t own one, I’m pretty sure you can borrow one from a friend or family member.

What is ube?

Pronounced as: “OO-BEH”, ube is a purple yam and is a staple ingredient for Filipino desserts. They are usually boiled and mashed and are used a lot in jams or to color sweet treats. It has a mild and sweet flavor, which some have said is a cross between vanilla and pistachio. Another thing, most people confuse it with taro, and the short answer is, no, they are not the same. Taro is often used in savory cooking, while ube is used for sweets.

3 main ingredients you’ll need:

  • Dairy-free heavy whipping cream (Sub for coconut whipping cream)
  • Coconut condensed milk (Sub for homemade coconut condensed milk, check this recipe out from Bigger Bolder Baking)
  • Ube extract (Sub for 1 cup of ube jam)

How to make vegan ube ice cream:

  • Whip the dairy-free heavy whipping cream until stiff peaks
  • Fold in the coconut condensed milk, ube extract, salt, and vanilla extract.
  • Pour into a freezer-safe container or ice cream container.
  • Freeze.
  • Soften first before serving!
  • ENJOY!

Can I eat vegan ube ice cream with anything else?

YES. The most popular dessert that ube ice cream is typically eaten with is called HALO-HALO (HA-LOH HA-LOH). What does halo-halo mean? Halo means to mix, so basically it’s a mix-mix dessert. Halo-halo is the ultimate summertime treat. It's a layered dessert that consists of sweetened beans, fruits, shaved ice, drizzled with milk, and topped off with ube ice cream and Leche flan. Ingredients

  • 2 pints Silk Dairy-free Heavy Whipping Cream (see notes for substitute)
  • 1 can coconut condensed milk
  • 1-2 tablespoon ube extract (adjust for your personal preference )
  • ¼ teaspoon salt
  • 1 teaspoon vanilla extract
  • Oreo flavored cones ()

Instructions

  • Using a stand mixer, whip the dairy-free heavy cream until stiff peaks. Do not over mix.

  • Once stiff peaks form, gently fold in the coconut condensed milk, ube extract, vanilla extract, and salt.

  • Pour the mixture in a freezer safe container, and cover. If your container doesn’t come with a container, you can use plastic wrap. Make sure that the plastic is touching the surface of the mixture. See notes

  • Freeze overnight. Set it out to soften, before serving. Enjoy!

Notes

  • Substitute for heavy whipping cream: 4 cups - coconut whipping cream https://amzn.to/3j8ohCJ
    Chill your coconut cream or coconut milk in the refrigerator overnight, make sure not to shake or tip the can to encourage separation of the cream and liquid.
  • Other options for coconut cream or milk: Savoy Coconut Cream or Aroy-D Coconut Milk.
  • Keep in mind that using coconut cream/milk will have an added coconut flavor.
  • Ube Extract - It can get pretty expensive to buy ube extract on Amazon, if you have a local Filipino store near you, I would check there first before buying online.
  • You can also add ube jam (ube halaya) in place of ube extract if you can’t find it. Use 1 cup of ube jam and mix it in. It might not be as vibrant purple, but it will taste just as great.
